Gluten Free Corn Fritters Recipe

If you're looking for a lip smacking brunch recipe, try this gluten free corn fritters with avocado salsa recipe. It will not disappoint! 

 

Ingredients 

Serves 4

  • 1⁄4 cup Greek yoghurt

  • 1 avocado mashed

  • 1⁄2 lemon, squeezed

  • Chilli flakes to taste

  • 3 cups fresh corn kernels

  • 3 spring onions, finely sliced

  • 2 eggs, whisked

  • 1 cup almond meal

  • 1 tsp baking powder

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • Smoked salmon to serve

  • Rocket leaves to serve

  • Lemon wedges to serve

 

Method 

  1. Mix Greek yoghurt, avocado, lemon juice and chilli flakes in a small bowl and set aside.

  2. Mix together corn, spring onions, eggs, almond meal, baking powder and seasoning to form the fritter batter.

  3. Heat the olive oil in a medium-sized pan and dollop a spoonful of batter in and pan fry in batches for 2-3 minutes on each side.

  4. Transfer to a baking tray and keep warm in the oven while you are making the rest of the fritters.

  5. Serve corn fritters with avocado salsa, smoked salmon and rocket and a few lemon wedges.
